A very good friend told me I should try out Mafia 2 (happy birthday, D!). While the character models are pretty great works of art, I'm still having trouble figuring out the deferred shading and turning off the ridiculously near-sighted depth of field... at least you can turn off the UI. Back to skulking small game community forums for a solution!
